Corn Tortillas

Ingredients

Yields about 20 medium size tortillas

Directions:

  1. Put masa and flour in medium bowl and mix dry ingredients together.
  2. Add 2 cups of water and mix.  Gradually add the rest of the water until it is the consistency of playdough.
  3. Kneed/mix in the bowl for 3-5 minutes.  The dough will form into a ball, not stick to the bowl, and mostly get off your hands too.
  4. Once on the hot griddle (put it on max heat), let at least 50% of the tortilla turn yellow (means it’s cooked) before you flip it the 1st time.
  5. Before flipping it the second time, let it get brown spots on the bottom, then flip it the 2nd time.  After about 30 seconds it should puff at this point.  Not all tortillas will puff, but most should if you follow these instructions.  You can help it puff by gently/slowly pressing down on the tortilla with a spatula, a paper towel, or your bare hands.  Just be careful with hot steam that may come out!

Salsa

  1. Boil the tomatoes and the jalapeno, then peel the skin off the tomatoes
  2. Blend tomatoes, jalapeno, garlic and salt to desired consistency.
  3. You can add chopped onion and cilantro to this if you’d like.

Sauteed Potatoes

  1. Peel and dice potatoes into any size you want (the smaller the size, the quicker they cook)
  2. Boil the potatoes in water until done
  3. Strain all the water out
  4. In a non-stick skillet pan, add oil and let it heat on medium (must be non-stick)
  5. Add tomatoes, onion, jalapeno, and garlic. Saute until all the veggie are soft (sauce)
  6. Add the potatoes to tomato sauce and mash them into the sauce until all the sauce is incorporated throughout the potatoes.

(forgot to mention you don’t cut through completely, just enough to create a pocket.

Remember, if you are going to invest in a tortilla press (tortillera), make sure it’s heavy (cast iron) or it won’t make very even tortillas.  You can find these tortilla presses at Mexican stores.  I haven’t had to shop for one, but I’ve seen them.

To make the plastic circles, just cut them out from a gallon sized plastic baggie.  Fold it as if you were going to make a snowflake.  

I didn’t stress this during the class, but in order to keep your tortillas warm, place them in a cloth napkin and stack them right on top of eachother.  This will help maintain them warm and soft.
